Penelope's Actions
Cooking
Reimagine Leftovers
I will learn about how to repurpose my leftovers into new meals and then try it.
Planning
Create a Weekly Meal Plan
I will reduce food waste and save money by planning a weekly menu of meals and ingredients for my household of 2.
Cooking
Revive Limp Produce
I will rescue limp produce like leafy greens or carrots by soaking them in cold water or using them in recipes where appearance doesn't matter.
Storage
Properly Store Apples
I will properly store apples by keeping them on the counter for up to 7 days and then moving them to the refrigerator.I will keep them away from bananas and avocados, since those speed ripening. I will properly store 5 apples.
Storage
Rotate My Foods
When I restock my fridge or pantry, I will put new items in the back and bring older items to the front to be used first.
Planning
Plan a Leftovers Day
I will plan an Eat the Leftovers night by creating a tasty “smorgasbord" or using a recipe that repurposes leftovers. I will eat 2 meals using leftovers.
Storage
Properly Store Leafy Greens
I will roll unwashed lettuce in a dry towel, then store it in a sealed bag in the refrigerator. I will properly store 3 leafy greens.
Storage
Properly Store Herbs
I will store fresh herbs just like cut flowers in a jar with 1 to 2 inches of water and cover with a plastic bag to maintain moisture. For woody or hardy herbs like rosemary, thyme, sage and chives, I will arrange them lengthwise on a damp paper towel, rolled up, then sealed in a plastic bag and stored in the refrigerator. I will properly store 4 herbs.

Reflection QuestionPlanning Create a Weekly Meal PlanAn average American throws out about 240 lbs of food per year. The average family of four spends $1,500 a year on food that they throw out. Does this surprise you? Where would you rather use this money? How has meal planning helped you avoid waste?
Penelope Jones 8/10/2022 8:58 AMBusy schedules seem to often get in the way of meal planning and the subsequent shopping. This will not work for everyone, but since I am retired, shopping more than once a week works for not planning too far ahead ... especially for perishables. -
Penelope Jones 8/01/2022 5:57 AM"Bowls" are popular right now and a great way to use leftover meat. Beef roast from family dinner became a "burrito" bowl main with rice, black beans, corn, avocado and salsa. My husband will eat those leftovers for lunch!
